Filet Mignon topped with Crispy Garlic Mushrooms, White Wine Streamed Small Potatoes and Green Bean Confit


Ingredients
  1. Filet Mignons
  2. Garlic (very fine slices)
  3. White Button Mushrooms (very fine slices)
  4. Small (Fingerling) Potatoes (skin on)
  5. Green Beans
  6. Salt & Pepper
  7. Butter & Extra Virgin Olive Oil
  8. Thyme
  9. White Wine and Bay Leave
Procedure
  1. Preheat oven to 250.
  2. Salt and Pepper Filet Mignons, rub with Olive Oil, let rest for 20 minutes.
  3. In cast iron skillet, brown on both sides for a few minutes then
  4. finish in oven for 20 minutes.
  5. Steam Whole Potatoes in White Wine and Bay Leave for 20 minutes.
  6. Add Green Beans for another 20 minutes.
  7. Finish in Butter, Salt and Thyme & Filet Mignons drippings for 5 minutes.
  8. In a lot of butter and Thyme on high heat, saute Mushrooms
  9. Add garlic for 1 minute, then put into the oven for 20 minutes.
  10. Arrange on plate and serve.
