Ingredients
- Filet Mignons
- Garlic (very fine slices)
- White Button Mushrooms (very fine slices)
- Small (Fingerling) Potatoes (skin on)
- Green Beans
- Salt & Pepper
- Butter & Extra Virgin Olive Oil
- Thyme
- White Wine and Bay Leave
- Preheat oven to 250.
- Salt and Pepper Filet Mignons, rub with Olive Oil, let rest for 20 minutes.
- In cast iron skillet, brown on both sides for a few minutes then
- finish in oven for 20 minutes.
- Steam Whole Potatoes in White Wine and Bay Leave for 20 minutes.
- Add Green Beans for another 20 minutes.
- Finish in Butter, Salt and Thyme & Filet Mignons drippings for 5 minutes.
- In a lot of butter and Thyme on high heat, saute Mushrooms
- Add garlic for 1 minute, then put into the oven for 20 minutes.
- Arrange on plate and serve.
