Ingredients- Pork Loin rubbed with Salt, Pepper and Fennel Seeds
- Onions, thinly sliced against the grain
- Butter
- Cabbage, very thinly sliced and diced
- Chipotle, seeds removed
- Mayonnaise
- Dash of Olive Oil, Red Vine Vinegar, Pepper
- Lemon Zest and Juice
Procedure- Preheat oven to 275.
- Combine Cabbage, Olive Oil, Red Vine Vinegar, Lemon Zest and Juice, Chipotle, Pepper and Mayonaise. Mix well and refrigerate.
- In a cast iron skillet on Very High Heat, deep brown Pork Loins and put into another skillet into the oven for 30 minutes.
- Combine onions and butter and reduce on low(!) heat until onions are brown, about 30 minutes. Turn over frequently.
- Slice, Arrange and Serve.
Three mounds. Yum yum yum.
