Seared Rubbed Pork with Caramelized Onions and Zesty Cole-Slaw

Ingredients
  1. Pork Loin rubbed with Salt, Pepper and Fennel Seeds
  2. Onions, thinly sliced against the grain
  3. Butter
  4. Cabbage, very thinly sliced and diced
  5. Chipotle, seeds removed
  6. Mayonnaise
  7. Dash of Olive Oil, Red Vine Vinegar, Pepper
  8. Lemon Zest and Juice
Procedure

  1. Preheat oven to 275.
  2. Combine Cabbage, Olive Oil, Red Vine Vinegar, Lemon Zest and Juice, Chipotle, Pepper and Mayonaise. Mix well and refrigerate.
  3. In a cast iron skillet on Very High Heat, deep brown Pork Loins and put into another skillet into the oven for 30 minutes.
  4. Combine onions and butter and reduce on low(!) heat until onions are brown, about 30 minutes. Turn over frequently.
  5. Slice, Arrange and Serve.
