Salmone Pazzo Americano Acque


Ingredients
  1. Salmon (skinless)
  2. Tomatoes (canned whole imported from Italy)
  3. Chives (fresh garlic variety from the Farmers market)
  4. Lime slices
  5. Salt (kosher) and Pepper (freshly ground from whole pepper corns)
  6. Garlic
  7. Extra Virgin Olive Oil (from Europe)
  8. White Wine
  9. water
  10. Anchovies (optional)
Procedure
  1. On medium heat in plenty of olive oil saute Garlic until brown. Remove. Add anchovies until dissolved. Cool.
  2. Add white wine and water so fish will be half covered.
  3. Add half of the lime slices, tomatoes and chives.
  4. Add fish, salt and pepper.
  5. Add half of the lime slices and tomatoes and chives on top of fish
  6. Bring to boil and simmer for 10 minutes, turning the fish once.
  7. Remove fish and keep warm.
  8. Reduce liquid to the right consistency.
  9. Serve.
