Ingredients
- Salmon (skinless)
- Tomatoes (canned whole imported from Italy)
- Chives (fresh garlic variety from the Farmers market)
- Lime slices
- Salt (kosher) and Pepper (freshly ground from whole pepper corns)
- Garlic
- Extra Virgin Olive Oil (from Europe)
- White Wine
- water
- Anchovies (optional)
- On medium heat in plenty of olive oil saute Garlic until brown. Remove. Add anchovies until dissolved. Cool.
- Add white wine and water so fish will be half covered.
- Add half of the lime slices, tomatoes and chives.
- Add fish, salt and pepper.
- Add half of the lime slices and tomatoes and chives on top of fish
- Bring to boil and simmer for 10 minutes, turning the fish once.
- Remove fish and keep warm.
- Reduce liquid to the right consistency.
- Serve.
