Pork Chops in American Crazy Water


Ingredients
  1. Pork Chops (trimmed)
  2. Tomatoes (canned whole imported from Italy) & Juice
  3. Chives (fresh garlic variety from the Farmers market)
  4. Jalapeño Peppers (fine Julienne cut with stems and seeds removed)
  5. Salt (kosher) and Pepper (freshly ground from whole pepper corns)
  6. Garlic (sliced)
  7. Extra Virgin Olive Oil (best you can afford at this time)
  8. White Wine (Pinot Grigio or California Chardonnay)
Procedure
  1. On super slow heat in plenty of olive oil saute Garlic and Jalapeño Peppers until soft (20 minutes)
  2. Add white wine and tomato juice
  3. Add half of the tomatoes and chives.
  4. Add pork, salt and pepper.
  5. Add half of the tomatoes and chives on top of pork
  6. Bring to boil and slow simmer for 20 minutes, turning the pork once.
  7. Remove pork and keep warm.
  8. Reduce liquid to the right consistency.
  9. Serve.
