Ingredients
- Pork Chops (trimmed)
- Tomatoes (canned whole imported from Italy) & Juice
- Chives (fresh garlic variety from the Farmers market)
- Jalapeño Peppers (fine Julienne cut with stems and seeds removed)
- Salt (kosher) and Pepper (freshly ground from whole pepper corns)
- Garlic (sliced)
- Extra Virgin Olive Oil (best you can afford at this time)
- White Wine (Pinot Grigio or California Chardonnay)
- On super slow heat in plenty of olive oil saute Garlic and Jalapeño Peppers until soft (20 minutes)
- Add white wine and tomato juice
- Add half of the tomatoes and chives.
- Add pork, salt and pepper.
- Add half of the tomatoes and chives on top of pork
- Bring to boil and slow simmer for 20 minutes, turning the pork once.
- Remove pork and keep warm.
- Reduce liquid to the right consistency.
- Serve.
