
Ingredients
- Salmon (skin removed and cut into portion sizes)
- Flour (salt and pepper mixed in)
- Zucchini (julienne cut)
- Tomatoes (seeds and course inner meat removed, cut into squares)
- Salt & Pepper
- Butter
- Olive Oil
- Red Pepper Flakes
- Rosemary
- Balsamic Vinegar
- Extra Virgin Olive Oil
Mix Tomatoes and Balsamic Vinegar and a pinch of salt. Let cool in the refrigerator.
On super low heat in a cast iron skillet add rosemary and red pepper flakes to the olive oil. After 20 minutes add zucchini, turn up heat until soft. keep warm.
Prepare Salmon "a la meuniere": Melt butter in medium high skillet. Drench Salmon in Flour, shake off excess, add to skillet and brown on both sides.
Combine and serve.
Try it with a gin-&-tonic or vodka tonic
