Salmon, Zucchini & Tomatoes


Ingredients
  1. Salmon (skin removed and cut into portion sizes)
  2. Flour (salt and pepper mixed in)
  3. Zucchini (julienne cut)
  4. Tomatoes (seeds and course inner meat removed, cut into squares)
  5. Salt & Pepper
  6. Butter
  7. Olive Oil
  8. Red Pepper Flakes
  9. Rosemary
  10. Balsamic Vinegar
  11. Extra Virgin Olive Oil
Procedure

Mix Tomatoes and Balsamic Vinegar and a pinch of salt. Let cool in the refrigerator.

On super low heat in a cast iron skillet add rosemary and red pepper flakes to the olive oil. After 20 minutes add zucchini, turn up heat until soft. keep warm.

Prepare Salmon "a la meuniere": Melt butter in medium high skillet. Drench Salmon in Flour, shake off excess, add to skillet and brown on both sides.

Combine and serve.
