Seared Salmon with Italian Potato Salad and Thyme-Butter Green Beans
Although not mentioned in "Le Repertorie de la Cuisine" this preparation of Salmon is neither new nor exotic, but refined. It will truthfully reveal the flavors already inherent in the ingredients. For the Salmon, you start with a 20 minute rub of salt, pepper and lemon juice, then sear in butter in a cast iron skillet for a few minutes, turn over and finish for 10+ minutes in a 300 degree oven. The Italian potato salad is made with whole potatoes, steamed in Soy Sauced Water for about 30 minutes, then cut and finished in Red Wine Vinegar, Salt, Pepper, Olive Oil & the green part of a Green Onion. Green Beans are added to the steaming potatoes for about 8 minutes and finished in Butter & Thyme.
