Tomato Braised Beef Short Ribs with Orzo

Ingredients
  1. Beef Short Ribs
  2. Fresh Whole Tomatoes, cut into squares
  3. White Onion, cut into squares
  4. Sun Dried Tomatoes, finely cut
  5. Paprika
  6. Oregano
  7. Salt & Pepper
  8. Finely Cut Fresh Parsley
  9. Olive Oil
  10. Orzo
  11. Hints of Ketchup & Worcestershire or Soy sauce
Procedure
  1. Preheat oven to 325
  2. In a enameled cast iron Dutch Oven, brown salted and peppered Ribs in Olive Oil, set aside
  3. Add onions, saute until soft
  4. Add oregano, paprika & dried tomatoes, mix well.
  5. Add fresh tomatoes and the Hints, mix well.
  6. Return Ribs to Dutch Oven, cover and put in oven for 1 1/2 to 2 hours.
  7. Cook Orzo in salted water.
  8. Remove Ribs from Dutch Oven and add orzo and parsley.
  9. Plate, Ribs on top.
