Ingredients- Beef Short Ribs
- Fresh Whole Tomatoes, cut into squares
- White Onion, cut into squares
- Sun Dried Tomatoes, finely cut
- Paprika
- Oregano
- Salt & Pepper
- Finely Cut Fresh Parsley
- Olive Oil
- Orzo
- Hints of Ketchup & Worcestershire or Soy sauce
Procedure- Preheat oven to 325
- In a enameled cast iron Dutch Oven, brown salted and peppered Ribs in Olive Oil, set aside
- Add onions, saute until soft
- Add oregano, paprika & dried tomatoes, mix well.
- Add fresh tomatoes and the Hints, mix well.
- Return Ribs to Dutch Oven, cover and put in oven for 1 1/2 to 2 hours.
- Cook Orzo in salted water.
- Remove Ribs from Dutch Oven and add orzo and parsley.
- Plate, Ribs on top.
